Chicken with vegetables in oven

   
   
Cut chicken in 8 pieces and skin. Preheat oven.  
       
Fry chicken pieces in big frying pan in olive oil or vegetable oil, sprinkling with salt, black pepper and chili powder.  
       
Remove chicken from pan to big baking form and put in oven at moderate heat.  
       
In frying pan add sliced onion, 4 sliced cloves of garlic, finely cut piece of ginger. Saute.  
       
Add about 1 kilo of mixed vegetables like potatoes, carrots, zucchini (squash), bell peppers, celery, cut in medium size pieces, (better to slice the potatoes than to cut them in chunks), saute a few minutes. Meanwhile add spices: 2 tsp. chili powder or to taste, 1 tsp turmeric, 1 tsp coriander, dash each of cinnamon and clove, salt.  
       
Add 2 chopped tomatoes and barely cover with hot water. Add salt, bring to boil and simmer until vegetables begin to soften.  
   
Spread contents of frying pan over chicken pieces, return to oven and bake until done. Baste with sauce occasionally.  
   
Serve with plain Basmati rice.
