Fish soup

     
   
Sauté one finely chopped onion (if you use spring onions too, use only1/2 onion) and 1-2 minced cloves of garlic (if you don't serve the soup with garlic bread, use more garlic in the soup) in small amount of olive oil or vegetable oil .  
       
Add vegetables cut in medium sized pieces, like potatoes, carrots, zucchini, red bell peppers, further saute for about 2 min., add chopped spring onions, celery leaves and parsley (or cilantro), chopped red chilies to taste.  
       
Add about 1 liter of vegetable or chicken stock, simmer until the harder vegetables are nearly done.  
       
Add 500 - 750 g of white fish cut into 1 1/2 inch pieces. If you like, you can of course add some other sea food as well. Simmer until done.  
       
Garlic bread: Mix butter with generous amount of crushed garlic, add a dash of paprika and a bit of finely chopped parsley or other herbs according to taste. Spread on bread slices and put in medium hot oven until golden brown. Serve hot with fish soup.
