Chicken with vegetables in
oven
|
|
|
|
|
Cut chicken
in 8 pieces and skin. Preheat oven. |
|
|
|
|
|
Fry chicken
pieces in big frying pan in olive oil or vegetable oil, sprinkling with
salt, black pepper and chili powder. |
|
|
|
|
|
Remove
chicken from pan to big baking form and put in oven at moderate heat. |
|
|
|
|
|
In frying
pan add sliced onion, 4 sliced cloves of garlic, finely cut piece of ginger.
Saute. |
|
|
|
|
|
Add about
1 kilo of mixed vegetables like potatoes, carrots, zucchini (squash),
bell peppers,
celery, cut in medium size pieces, (better to slice the potatoes than to
cut them in chunks), saute a few minutes. Meanwhile add spices: 2 tsp.
chili
powder or to taste, 1 tsp turmeric, 1 tsp coriander, dash each of cinnamon
and clove, salt. |

|
Add 2
chopped tomatoes and barely cover with hot water. Add salt, bring to boil
and simmer until vegetables begin to soften. |
|
|
|
Spread
contents of frying pan over chicken pieces, return to oven and bake until
done. Baste with sauce occasionally. |
|
|
|
Serve
with plain Basmati rice. |
|
|
|
